I’m Janice Kuz, and after more than 20 years in hospo and almost a decade of slinging exceptional coffee at The Nines in Maroochydore, I can tell you straight up, unique coffee blends are one of the secret weapons behind our "We Don’t Do Boring" philosophy.

When I opened The Nines, I wanted a café that felt bigger, bolder, and more fun than the usual. The name is a cheeky nod to being "dressed to the nines", and that carries through to everything, especially our coffee. A blend is not just random beans tossed together. It is more like a supergroup, where each coffee brings its own flavour, texture, and vibe to the cup.

The real magic, though, is consistency. Coffee harvests change with the seasons, but blending lets our local roaster, Tim Adams Specialty Coffee, tweak the recipe with fresh crops while keeping that signature flavour you love. It means your flat white on a Monday tastes just as next-level as your oat latte on a Saturday, even though the beans in the background might have shifted a little.

Our crew and our regulars are serious about the good stuff. What is the Deal with Blends vs Single Origin?

Behind the scenes, it starts with sourcing beans that meet our standards for flavour and feel good to serve, then the Tim Adams crew sample roast each origin so they can taste exactly what it brings to the table. During cupping, they are checking aroma, acidity, body, sweetness, and all those little notes that most people just feel as "this tastes damn good".

Once they have found the right combo for Vintage Black, each component is roasted separately to its sweet spot, then blended after roasting. That means the chocolate notes stay chocolatey, the nutty bits stay clean, and the structure of the blend stays strong enough to shine in a piccolo, an iced latte, or that quick takeaway flat white on your way to work.
